Ingredients
20 g ColaCao Pure Cocoa
425 ml freshly squeezed orange juice
55 g soft light brown sugar or muscovado sugar

Step-by-step instructions
1. Whisk the base
Combine the ColaCao Pure Cocoa and sugar in a jug. Add the freshly squeezed orange juice and whisk together vigorously with a balloon whisk until the cocoa and sugar are fully dissolved with no lumps remaining.
2. Let it stand to develop the flavours
Cover the jug and leave to stand in the fridge for 1 hour. This standing time is key — it allows the citrus and cocoa notes to mould together properly, giving you a far more rounded drink than if served immediately.
3. Serve
Pour into chilled glasses over ice and serve straight away.
Tips & Tricks
- For a finishing touch, finely grate a little fresh orange zest over each glass just before serving. It lifts the aroma beautifully.
- Pour the mixture into ice lolly moulds and freeze overnight for homemade Pure Cocoa & orange ice lollies, a brilliant treat for warm days.
- Muscovado sugar adds a hint of molasses that pairs particularly well with the bitterness of the cocoa; soft light brown sugar gives a more delicate sweetness. Either works wonderfully.
- For a more intense cocoa flavour, add an extra 5 g of Pure Cocoa and adjust the sugar to taste.
